KERRES Hybrid System for Smoking, Cooking and Baking
The Hybrid System machine system is the result of many years of experience and systematic product development. The machine system is suitable for the thermal treatment of food and pet food.
It enables the treatment processes to be fully automated:
• Dry
• Reddening
• Smoking
• Cook
• Cooking
• To bake
• Roast meat
Typical products to be treated are:
• Sausage – raw sausage, cooked sausage, scalded sausage
• Meat – cooked cured products, raw cured products, jerky products
• poultry
• Fish
• tofu
The machine system is modular and can be expanded with further chamber parts. The floor can be driven on for treatment trolleys up to 42 “(106 cm) wide.

Possible uses of the hybrid system
Examples that can be used in any process:
Cook:
In general, savings (energy, weight loss, process time) are possible with every product. Even if it is only a pure cooking process, the penetration times are shorter than with a vertical flow hrough the treatment room.
Cold smoke:
In applications such as cold smoke, the horizontal flow also results in shorter drying times and thus shorter overall processes.
To bake:
Complete loads of the baking trays are possible for baking applications. There is no need for any gaps between the baking tins because the hot air flows evenly and horizontally through all levels above and below the products.
Thawing:
When defrosting blocks of meat in a hybrid system, a high load can be achieved with the mallest intermediate distances from the levels and without any distances to the sides of the blocks.
